Tsoureki — Greece
Tsoureki offers a distinctly aromatic Easter bread experience, primarily flavored by mahlepi and mastic resin. Mahlepi, derived from the kernel of a Persian cherry tree, imparts a subtle cherry or almond-like, sweet woody flavor, while mastic gum, a resin from a Mediterranean tree on the Greek island of Chios, adds a unique, somewhat licorice-like taste. This sweet, braided bread, often adorned with red-dyed eggs, symbolizes new life and is a traditional centerpiece on Greek Easter tables. Families traditionally share the bread and eggs after the midnight Resurrection service. The distinct combination of mahlepi and mastic sets Tsoureki apart from other Easter breads. However, these specialized ingredients can sometimes be difficult to source outside of Greek or Middle Eastern markets.
