Two very different kinds of 'cool'
The destinations here split into two groups that don't compare well against each other. Seven of them — Iceland, Norway, the Faroe Islands, Finnish Lapland, Scotland, Ireland, and the three Alpine entries — are cool because of latitude or altitude, and they're all genuinely reachable on a short-to-medium flight from Western Europe. Patagonia is cool for a completely different reason: it's in the southern hemisphere, so a 'summer' visit from the northern hemisphere actually lands in its winter shoulder season. Comparing Patagonia's cost or accessibility to the Faroe Islands isn't really comparing like with like — one is a long-haul trip built around remoteness, the other a short-haul trip built around ease.
What separates the well-trodden routes from the empty ones
Within the Alpine and Nordic entries, there's a real difference between destinations built for high through-put — Switzerland's rail network, Austria's hut-to-hut system, the Icelandic Golden Circle — and the ones that stay quiet by design. The Faroe Islands cap access to sensitive sites like Mykines with timed entry specifically to avoid becoming the next overtouristed fjord. Scotland's West Highland Way and Ireland's Wild Atlantic Way sit in between: well known, but rarely crowded outside a handful of pinch points like the Cliffs of Moher car park. If solitude matters more to you than convenience, that's a better way to choose between these than temperature alone.
